Arrange the charcoal upright in the chimney, leaving some space for airflow.
Place the charcoal chimney on a hotplate, burner or portable stove. You can also use fire starters and place it underneath the charcoal chimney.
Turn the burner on high for 15 minutes until the charcoal turn bright red throughout.
After 15-20 minutes on high, turn off the burner and allow the charcoal to fire up on it's own for an additional 10 minutes.
When the charcoal is bright red throughout, it's ready to use.
Using tongs, carefully move the lit binchotan to your grill or brazier.

When finished grilling, you can re-use the charcoal. Simply dunk the charcoal one by one in water and defuse them. Once cooled, place them on a metal tray and leave the outside to dry for 24 hours. Once they are dried, they are ready to use again.
